Sabudana Vada Recipe | How to make crispy sago fritters

Sabudana vada recipe helps you to make crispy sago vada that is crunchy on the outside, and soft from inside. They make for delicious snack that goes well with a cup of tea or coffee. These vadas can be eaten during Hindu fasts such asΒ  Navratri and Janmashtami.

I have earlier shared the recipe of sabudana khichdi and samak ke chawal that can be consumed as phalahar during fasting. Kebabs made from unripe bananas – Kachche kele ke phalahari kebab are also very delicious.

What is sabudana?

Sabudana is called sago in English. They are small tapioca pearls made from starch extracted from cassava roots.Β These sabudana pearls should be soaked and cooked before they can be eaten.

Sabudana is loaded with carbohydrates and gives you instant energy. That’s why it is a popular food choice during fasting in India.Β It is also a good source of protein, iron and calcium.

Sabudana vada and khichdi are popular breakfast and snack items. Sabudana is also used to make a kind of Indian pudding called sabudane ki kheer.

How to soak sabudana?

Soak sabudana in just enough water. Sabudana expands on soaking.

Wash the sabudana and then soak it properly before using it to prepare vadas. Soak sabudana in water so that the pearls are just immersed in water, and there is just a thin layer of water above sabudana. If you soak the sabudana in lots of water, it will turn soggy and it will be difficult to make the vadas. It is best to soak sabudana overnight or for around eight hours. If it is not possible to soak them so long, soak them for at least an hour in warm water.

How to make sabudana vada?

This sabudana vada recipe is made keeping in mind Hindu fasting rules. Boil and mash some potatoes. Add soaked sabudana, rock salt, roasted and crushed peanuts, green chillies, black pepper, and coriander leaves (cilantro). Make small flattened balls and deep fry in hot oil.

If you do not want to fry them you can also bake the vadas at 180 degree Celsius till they are golden brown.

Serve hot vadas with green chutney, or yogurt.

Sabudana vadas are good breakfast and tea time snacks. Make these phalahari sabudana vadas when you are fasting and get instant energy.

  1. Wash sabudana and soak them in just enough water to immerse them completely. Soak it preferably for eight hours or at least for 1 hour.
  2. Boil and peal the potatoes. Grate them.
  3. When sabudana is soaked overnight it expands and absorbs all the water. The pearls become soft but are not sticky. Take this soaked sabudana in a large mixing bowl. Add grated potatoes, roasted and crushed peanuts, green chillies, coriander leaves, and rock salt to taste. If you are not fasting you can use table salt instead.
  4. Mix everything properly till the mixture becomes uniform. Heat oil in a kadai or heavy bottomed pan. Prepare lemon sized balls of the sabudana mixture and flatten them a bit by pressing them gently with your fingers.
  5. First add one sabudana vada in hot oil. Do not disturb it for a minute or two. Then fry it from both the sides. If it does not break while frying, fry rest of the vadas in hot oil four at a time till they turn golden.
  6. If the vada breaks, the reason can be your oil is not sufficiently hot. Other reason can be your sabudana is soggy. In that case add a tablespoon of singhare ka atta or rajgira ka atta (waterchestnut flour or amaranth flour) to the sabudana mixture and then fry.
  7. Serve hot with phalahari green chutney or dahi (yogurt).
Recipe Notes
  • Do not add too much water to sabudana. It will become soggy. Just add water that is enough to completely immerse the sabudana.
  • If you are not fasting you can add other spices of your choice though this lightly spiced sabudana vada tastes great. Subtle flavor of roasted peanuts and cilantro makes it delicious.

Apple Gujiya Recipe | How To Make Mawa-Apple Gujiya

Apple Gujiya Recipe helps to make delicious gujiyas with apple and mawa filling. Gujiyas are crispy sweet dumplings that are traditionally filled with mawa and nuts. But here I am giving a fruity flavor to the gujiyas. This apple gujiya recipe takes some elements of apple pie.

It is a tradition in many parts of India to make gujiyas for the festival of Holi. Making gujiya requires some time and effort. I remember good old days when a large number of gujiyas were made for Holi as they were served to all the guests that came to our house. Those were the times when people were not calorie conscious and used to eat to their heart’s content. Ladies from neighborhood would collect in each other’s home and make gujiyas in a group. This way they got an opportunity to socialize and would also not feel the burden of making so many gujiyas all by themselves.

We enjoyed gajar ki kanji, kanji vadas and thandai along with gujiyas and other snacks.

The outer crust of gujiya

The crust of gujiya is made with all purpose flour (maida). Add ghee/oil to the flour till it reaches the consistency of course crumb. My mother taught me a way to check the flour. When you press the flour in your fist and then open it, if the flour holds together, that means you have added enough fat. Now add water and prepare hard dough similar to the consistency of puri dough.

Cover the dough and keep it aside for half an hour. In the mean time prepare the filling.

The filling

In this apple gujiya recipe, we will add apple in the filling. Peel the apples and cut them into small pieces. Crumble the mawa. If it is hard you may grate it. Take a kadhai or heavy bottomed pan, and heat it. Cook apples and mawa mixture till it turns slightly brown. Add cinnamon and cardamom powder. Also add powdered sugar and chopped nuts and raisin to it. The filling is ready.

A word of caution – do not brown the mixture too much because it will brown further when the gujiya is fried.

Prepare gujiyas

Divide the dough into sixteen equal parts. In the same way divide the filling as well into sixteen equal parts.

I use a gujiya mold to make gujiyas of perfect shape and uniform size. Nowadays they are easily available in the market especially near Holi time.

Roll out one part of the dough into a small circular shape (puri) of about 7 cm diameter. Place it over the mold and keep some filling on one side of the puri. Apply some slurry on the edges of the puri and close the mold. The edges will be sealed. Do not use too much filling in the gujiya as there is a risk of gujiya opening up while frying. I have learnt a trick that can be used in order to avoid opening up of gujiyas to to pressure while frying. Make a small hole in one corner of the gujiyas with a toothpick. The steam from inside of gujiya can escape from this hole.

Prepare all gujiyas in the same manner. Keep the gujiyas covered so that they do not dry up by the time you prepare all the gujiyas.

Now heat ghee/oil in a kadai and deep fry gujiyas on low to medium heat till they are golden brown.

Enjoy gujiyas fresh out of kadai, or at room temperature.

Prepare dough
  1. Take all purpose flour in a large mixing bowl. Add ghee to it and mix well by rubbing flour between your palms. The flour will look like coarse crumb. Now gradually add water, and prepare hard dough of consistency similar to puri dough. Cover the dough and keep it aside for at least thirty minutes.
Prepare filling
  1. Heat a heavy bottomed pan or kadhai. Add apple pieces to it and cook on low heat for two minutes. Add crumbled mawa to it and stir well and cook till the mixture dries up and slightly changes the color. Switch off the gas and let the mixture cool down.
  2. Add powdered sugar, cinnamon powder, and cinnamon powder to the mixture and mix well. Also add chopped nuts and resins to the mixture and mix everything properly. The filling is ready.
Prepare the gujiyas
  1. Divide dough into 16 equal parts. Use rolling pin to prepare puris of about 7 cm diameter.
  2. Prepare slurry of 2 tablespoon water and a teaspoon all purpose flour. Divide filling into 16 equal parts.
  3. Place one puri on the gujiya mold and place the filling at the centre of the puri. Apple some slurry at the edges. Now close the mold and press it slightly. Open the mold and take out the gujiya. Place it on a plate and prepare all the gujiyas in similar manner. Cover the gujiyas with a moist kitchen towel so that they do not dry up.
  4. Heat oil in a kadhai. The oil should be medium hot. Carefully add four-five gujiyas one by one to this hot oil. fry the gujiyas till then turn golden.
  5. Take them out and place them on paper napkin. Fry all the gujiyas in the same manner. Allow them to cool and then store in an airtight container. They stay good for 1-2 days at room temperature. In refrigerator they stay good for a week.
Recipe Notes
  • Prepare hard dough for gujiyas. If the dough is soft, gujiyas will also be soft and not crunchy due to presence of too much moisture.
  • Roast mawa and apple till the mixture is dry and crumbly.
  • If you do not have gujiya mold, you can press and then pinch the edges with your hands.
  • Do not fry gujiyas on high flame as they will turn brown on the outside and will remain raw inside.
  • For glazing you may brush the fried gujiyas with honey.

Date, Walnut Cake Recipe – Eggless Whole Wheat Loaf

Date, Walnut Cake RecipeΒ helps you to make delicious and healthy whole wheat cake without using sugar and eggs. This mildly sweet tea loaf gets its sweetness from dates.

Though low in fat, this cake still remains moist due to presence of dates. It also keeps good for a week if storedΒ  in an airtight container.

I wanted to make a healthy cake as an accompaniment with my tea. For this reason I decided to use whole wheat flour (atta) in this cake. While trying this recipe, initially I had added jaggery to give sweetness to this cake. I do not like overly sweet cakes; I realized that sweetness provided by dates is enough for this cake. Occasional crunch is provided by walnuts.

I have earlier shared the recipe of atta biscuits that can be enjoyed with tea. You can also try my cinnamon rolls recipe as well as cherry pie recipe.

If you are not using pitted dates, first remove stones from the dates. Now, to soften up the dates soak them in 1 cup of boiling hot water. Add a pinch of salt in this mixture and keep it aside for thirty minutes.

Place the walnuts in an oven tray and bake at 180 degree C (375 F) for 5 minutes or till they turn brown and are roasted. When they cool down, cut them into smaller pieces.

Prepare batter for date, walnut cake recipe

Once the dates are soaked, put them along with the water in a blender. Add yogurt and butter as well, and blend them lightly in such a way that all the dates do not get grounded and there are still some chunks of dates in the mixture.

Take out the date mixture in a large mixing bowl. Sift in flour, baking powder, and ground cinnamon. Add walnuts and mix everything properly.

Pour this batter in a prepared tin and bake for about forty minutes or till done.

Meethe Chawal Recipe – How To Make Yellow Sweet Rice

Meethe Chawal RecipeΒ helps to make delicious yellow sweet rice also called zarda rice or zarda pulao. This rice is often made in the Indian subcontinent on special occasions- be it festivals or marriages. In North India it is especially made during basant panchami to celebrate the onset of spring season.

Traditionally, people also makeΒ  rice kheer and seviyan kheerΒ during festivals. During Diwali I also prepare chocolate burfi and moong dal barfi.

Cook the rice

Use good quality basmati rice to make meethe chawal. You may also use golden sela rice, but I prefer basmati long grain rice as it emanates nice aroma.

Wash the rice properly till the water in which it is washed becomes clear. Soak the rice for half an hour.

Though we will use saffron in this recipe, that gives yellow color to the rice, but still to get bright yellow color you may use yellow food color or turmeric. Add food color/turmeric while cooking the rice. Cook the rice in large amount of water. Cook till it is 90 percent done. Drain extra water and rest the rice in colander. It is done to get rid of starch present in rice. We do not want sticky rice. The rice would have turned bright yellow.

I have seen that turmeric powder also gives very nice yellow color; and since it is cooked nicely, there is no evident flavor of turmeric. So you can easily replace food color with turmeric powder, a natural ingredient.

Soak the saffron

When the rice is cooking take a pinch of saffron and lightly roast it in a pan. Take a tablespoon of warm water. Rub saffron grains between your palms and soak them in warm water. Roasting and rubbing the saffron to break the grains helps in extracting flavor of saffron nicely.

How to make meethe chawal?

Heat ghee in a big heavy bottomed pan. Add bay leaves (tej patta) and cloves (long). Then add cashew nuts and fry them on low flame for few seconds. Also add resins in the same ghee and fry them. Then add rice and sugar and saffron water to it. I have used 3/4 cup sugar because I like mildly sweet rice. You can adjust the quantity of sugar according to your taste. Stir well, though carefully so as not to break rice grains. At this point also add cardamom powder. Mix everything well. Cover the lid and cook for two – three minutes. If you open the lid you will notice that the sugar has melted, and there is water at the bottom. Cover it once again and switch off the gas. Let the rice rest for fifteen to twenty minutes. It will absorb all the water, and will also get completely cooked.

Yellow sweet rice is ready. Serve hot. It can be enjoyed on its own as a side dish, or a dessert. Many people eat it with curry as well.

  1. Add 4 cups of water to soaked rice. Also add food color/turmeric powder, and cook the rice till 90 percent cooked. Drain water and rest the rice in a colander.
  2. Heat ghee in a heavy bottomed pan. Add bay leaves and then cloves. Keep the flame low. Add cashew nuts and fry . After a minute add resins and any other dry fruit or nut you want to add. Fry till nuts turn golden. Take out few fried nuts and resins and keep aside.
  3. Add rice to the pan. Then add sugar and saffron water and mix well. After that add cardamom powder and stir.
  4. Cover the rice and cook for 2-3 minutes on low flame. Open the lid. You will notice that sugar has melted. Stir and cover the lid once again. Switch off the gas and allow the rice to rest for 15 minutes. You will notice that rice would have soaked all the extra water.
  5. Serve hot garnished with fried nuts and resins.
Recipe Notes
  • You can add a tablespoon of condensed milk to the rice while frying. This gives extra richness. If using sweetened condensed milk, reduce the quantity of sugar in equal amount.
  • You may also add orange zest for flavor.

This is a perfect soup for the nippy weather. It is also called dhania tamatar ka shorba. This shorba is a fusion of tomato soup and Indian curry.

What is a shorba?

The term β€˜shorba’ is derived from Arabic word β€˜shurbah’ that means soup or gravy. Shorba is believed to have originated from erstwhile Persia where the term referred to salted water in which meat was boiled.

In India, term shorba refers to thin gravy – of mostly meat. Like many meat dishes, shorba came to India with Mughals. They also brought the famous tandoori cooking to India.

Now many versions of both non-vegetarian and vegetarian shorba are made here. We can easily consider hot and spicyΒ tomato rasam to be the South Indian version of tomato shorba.

How to make tomato shorba?

To make the shorba, heat some oil in a pan. Add whole garam masala, cumin seeds, ginger garlic paste, and saute. Then add diced tomatoes, and coriander (cilantro) roots and stem. Also add chilli powder and some salt. Cook covered for fifteen to twenty minutes. Allow the mixture to cool. Then blend it and strain the soup.

Add a little sugar if required. Check and adjust the seasonings. Cook it once again for few minutes. In order to infuse some more flavor, give it a tadka of ghee, dried whole red chilli, and cumin seeds. Garnish with some chopped coriander leaves and serve hot.

  1. Heat oil in a pan. Add bay leaves, black pepper corns, black cardamom, green cardamom, cinnamon stick, and cumin seeds. When the cumin starts to splutter add diced tomatoes and coriander roots and stem. Add red chilli powder and salt to taste. Stir well. Add half cup water. Cover and cook on low flame for 10 minutes. Open the lid occasionally to check. If water has reduced considerably, add some more water so that tomatoes do not get burnt.
  2. Remove the tomatoes from flame, and allow them to cool a bit. Remove bay leaves. When slightly cold, blend it well in a blender. Pass the mixture through a sieve.
  3. Once again keep the soup on medium flame. Add two cups of water, or as much water as needed for making thin soup. Adjust salt in the soup. If it is too sour, add a teaspoon of sugar. Once the mixture comes to a boil remove from flame.
  4. Heat ghee in a tadka pan and add cumin seeds to hot ghee. Once they start to crackle, add whole red chillies. Pour this tadka over tomato shorba.
  5. Shorba is ready. Garnish with fresh chopped coriander leaves and serve hot.
Recipe Notes
  • You can use a carrot too along with the tomatoes in the soup. It will act as a thickening agent and will also provide sweetness to the soup.

You can replace prawns with paneer, mushroom, parboiled baby potatoes, or chicken, and they will all taste great.

I associate winters with various soups, and love to eatΒ paneer kulcha with spinach and corn curry. Stir Fry prawns and stuffed grilled pomfret are the two seafood dishes hugely popular in my home.

Sear the prawns

First of all shell and de-vein the prawns. You may keep the tails intact if you desire. I get it done from the shop itself. Fry the prawns in hot oil to seal in all the juices. This searing of prawns helps to get a crunchy texture on the outside, and also adds depth to the flavor.

How to make flavorful sauce

When the prawns turn golden brown, and become crunchy, take them out from the pan. Now, in the same oil fry garlic and ginger julienne till they turn golden. I love to add dried red chillies in my stir fries. Their roasted aroma works wonder in any dish. When the chillies are fried, add prawns and a small amount of corn starch. This corn starch thickens the sauce, and also helps in binding the sauce to the prawns.

Add some soya sauce and chilli sauce to the prawns. Also, for blending the flavors add a dash of honey. In place of honey you can use brown sugar, or even white sugar if you don’t have both. Spring onions taste wonderful in Chinese cuisines. Since it is an Indo-Chinese version, I added some spring onions in the mix as well.

Stir fried prawns are ready. It hardly took fifteen minutes to prepare these delicious prawns. Decorate with spring onion greens and cilantro, and serve hot.

  3. Add corn starch to the prawns. Then add soya sauce and chilli sauce in the mix. Add salt to taste. Add honey and mix properly. Add spring onion greens, saving some for garnishing. Mix everything and switch off the gas. taste and adjust salt and honey if needed.
  4. Serve hot garnished with spring onion greens and chopped coriander leaves (cilantro).

Now the winter has set in and hot soups provide much needed warmth to the body. Nowadays I am experimenting with various soups and shorbas. I will share these recipes in my future posts. Cream of mushroom soup is an all time favorite in my home and I very often make it. Just like almond soup this soup is not very spicy. Whenever I want to eat something spicy I prepare tomato rasam.

How to make the soup?

Using this cream of mushroom soup recipe, you can easily make the soup that has wonderful taste and flavors. Just wash and chop mushrooms. Also finely chop onions and garlic. You can use garlic paste as well. Gather all other ingredients and start your cooking.

Cream of mushroom soup recipe: saute mushrooms with onion and garlic

First of all saute chopped garlic and onion in butter. Then comes the turn of mushrooms. Add mushrooms and stir fry for two-three minutes.

In order to add some body to the soup, add some corn starch. I very often add atta flour instead of corn starch as it is a healthier option. The only difference on adding atta is in color of the soup. Whereas corn starch keeps the soup white, atta makes it a bit muddy. Taste remains the same. So nowadays if I have to impress my guests, I use cornstarch as a thickening agent, and if I am making it for my own consumption, I add atta or sometimes rolled oats.

Add salt and cover and cook for two-three minutes. After that add some vegetable stock or water, and milk. Cook till the soup starts boiling. You need to stir occasionally. The soup will start to thicken.

Adjust salt and also the consistency. If the soup is too thick add some more milk. If it is thin then dissolve some corn starch in water and add it to the soup, stirring continuously. Add some nutmeg powder and black pepper powder for extra flavor. A healthy version of soup is ready. If you want it to make it rich, go on and add some cream to it as well. But I like it without adding cream.

Serve hot, garnished with chopped cilantro (coriander leaves) or parsley.

  5. If you want healthier version of soup, you can skip adding fresh cream. Soup tastes great without cream as well.

Bread And Butter Pudding Recipe

This Bread and Butter Pudding Recipe will help you in making delicious pudding in simple steps.

You can make good use of stale bread in making this traditional British pudding. Layers of bread set with milk and egg custard is simply delicious.

After French toast recipe, this is another recipe that uses bread, and you can use stale bread in the recipe. Unlike smooth cheese cake like consistency of steamed yogurt pudding (bhapa doi) that I make, this pudding has more body.

What kind of bread to use?

You can use any kind of bread – normal sandwich bread, brioche, buns, croissant, or even our very own pav buns. I have used sandwich breads for this recipe, though recipe more or less remains same for any type of bread.

Steps to make bread and butter pudding

Preheat oven to 180 degree C (350 F).

Cut bread slices diagonally, so that you will have triangles of bread. Grease an oven proof dish of 1 liter capacity.

Apply butter on one side of the bread slices. Place slices in baking tray, so that they slightly overlap each other. Spread some raisins (kishmish) over the bread. Also, sprinkle some nutmeg powder and cinnamon powder over this bread layer.

Now, make another layer of bread over the first layer in the same manner. Once again sprinkle nutmeg and cinnamon powder, and place some raisins over this layer as well.

Heat milk in a large bowl. Preferably use full cream milk. In this recipe I have added some cream to the milk for richer taste. It is optional. Remove from flame just before it starts boiling. Keep it aside.

In another bowl lightly whisk the eggs. Add sugar and vanilla essence and mix them properly. First add a tablespoon of hot milk in this egg mixture and mix. Then gradually add rest of the milk, stirring continuously.

Pour this mixture over bread layers. I thought I had taken too much milk and was worried that I will end up with liquidy pudding. But do not fret; the milk gets absorbed and you will get nice and moist pudding in the end. Press the bread gently so that they soak the milk mixture. Place the dish in preheated oven and bake at 180 degree C for 40 minutes or till upper crust is golden brown.

Remove from oven and sprinkle some powdered sugar (optional). Serve warm. You can pour some honey, cream, or custard over the pudding. I like to add some roasted nuts to give some crunch. I like to eat my cinnamon rolls and bread pudding with ice-cream. Cherry pie is another dish that I often pair with ice-cream.

  3. Sprinkle some cinnamon powder and some nutmeg shaving on the bread slices. Also, spread some sultanas (kishmish) over the bread layer. Now form one more layer of bread slices and once again sprinkle some nutmeg powder and cinnamon powder. Place the remaining sultanas over this layer.
  4. Add cream to the milk. Heat milk with cream till just before its boiling point. That means remove from heat before it starts to boil. Set it aside. Beat eggs. Now add sugar and vanilla essence. Mix them up properly.
  5. Now add a tablespoon of hot milk to this egg mixture and mix it. Then gradually add remaining milk stirring continuously. Pour this milk and egg mixture over bread layers. Press the bread slices gently so that milk is absorbed by the slices.
  6. Place the baking dish in oven and bake at 180 C for 40 minutes or till a golden crust is formed and the pudding is done.
  7. Serve warm with ice cream, whipped cream, or custard.
Recipe Notes
  • For good flavors use freshly grounded cinnamon powder and freshly grated nutmeg shavings.
  • You can replace sultanas with candied orange peels, or any dried fruits of your choice.

French Toast recipe | How To Make Classic French Toast

This French toast recipe will help you make absolutely delicious Classic French Toasts. The method to make these French Toasts is very easy, and you can serve them for breakfast in no time.

Whenever I have to make a quick breakfast, French Toast is my savior. It is loved by all in my house. I have perfected this classic French Toast recipe and it is fool proof.

I also enjoy making cinnamon rolls and cherry pie for breakfast. Though I make them only when I have more time.

What type of bread should be used?

Use any bread preferably the one with thick slices. It is a good idea to use bread that is one or two days old. Fresh bread is softer, and slices tend to become too soggy to handle. Though I make do with whatever bread is available at home.

Prepare the batter

I use half cup milk with two large eggs for batter. For creamy flavor, you can use cream instead of milk, or use half and half.

Beat the eggs and add milk, vanilla, cinnamon powder, and nutmeg powder. I prefer to grate nutmeg and use freshly grated nutmeg powder. It has wonderful flavor that we do not get with ready made nutmeg powder. Also add sugar and salt. Mix everything well.

Make French Toast

If using sandwich bread, cut the bread slices diagonally. Heat a skillet or griddle and butter it. Dunk a slice of bread in the batter, turn it so that it is properly soaked from both the sides. Now place it on the griddle and cook on both the sides till golden. Keep the flame low so that egg gets cooked properly from inside the bread as well.

Some precautions to take

  • Do not dunk the bread slice in batter too long. It will make the slice soggy and difficult to handle. Moreover, the toast itself will come out soggy. Soak the bread for aboutΒ  2 seconds on both the sides and then take it out and put it on griddle.
  • Cook on low to medium heat. If the temperature is too high, the toast will get cooked on the outside, but the egg will remain uncooked inside.
  • Use a griddle, tawa, or a heavy skillet for better result.

Serving tips

Serve freshly made French Toasts with a pat of butter. You can sprinkle some powdered sugar on top.

Many people like to eat it with fresh fruits, maple syrup, or honey. I sometimes sprinkle grated coconut on the toasts.
